STIR FRY CHICKEN & PRAWNS

Ingredients


275g Chicken Breast


125g Peeled, cooked Prawns


150g Mushrooms, roughly chopped


3 celery sticks


1 Pepper, 1 Onion


2 Garlic Cloves, crushed


2 tbsp Olive Oil, 2 tbsp Lemon juice


Method


1. Heat oil in a wok. Stir in celery, peppers, and onion. Cover and cook over gentle heat for 3 mins, making this an easy recipe for a quick meal.


2. Stir in garlic, chicken, mushrooms, and prawns. Cover and cook for 8-10 mins, bringing together healthy meal ideas that are both delicious and nutritious.

THAI TURKEY BURGERS

Ingredients


400g Turkey Mince


70g breadcrumbs


3 tbsp Red Thai curry paste


1/2 bunch Spring onion


1 Egg


1 tbsp Olive Oil, 2-3 tbsp Plain flour


Method


1. For an easy recipe that's packed with flavor, place the turkey mince, breadcrumbs, curry paste, spring onions, and egg into a large bowl. Mix well with your hands to combine. Divide the mixture into 4 portions and shape them into burgers. Sprinkle some plain flour on a floured board and chill the burgers for 20 mins.


2. To finish off this healthy meal idea, brush the burgers with olive oil and grill them for 7 minutes on each side, or until they are firm, golden, and cooked through. Scrambled Eggs

Ingredients


2 Large Eggs


2 Egg whites


2 tbsp Single Cream


10g Butter


50g Rocket


1/4 tbsp Olive Oil


Method


1. In a large bowl, whisk together the whole eggs and egg whites. Whisk in the cream along with a pinch of salt and pepper. This is one of those easy recipes that anyone can master!


2. Heat a non-stick frying pan for 1 minute. Add the butter and let it melt without browning. Pour in the egg mixture and let it sit for 20 seconds before stirring.


3. Use a wooden spoon to lift and stir the eggs. Repeat until they are softly set. Remove from heat and let it continue to cook for a few more seconds before serving with some rocket on the side. CARROT PANCAKES

Ingredients


150g Coconut Flour


2 medium size Carrots, grated


½ Onion, grated


2 Eggs


2 tbsp Almond Butter


1 tsp x 4 Coconut Oil


3 tsp Baking Powder


1 tsp Himalayan Rock Salt


Method


1. In a large bowl, sift together the coconut flour, baking powder, and Himalayan rock salt to create a base for your easy recipes.


2. Make a well in the center of the dry ingredients and add the eggs, grated carrots, and onions. Combine everything until mixed well for a delicious, healthy meal idea.


3. Melt 1 tsp of coconut oil in a large non-stick frying pan. Once it's hot, ladle in some batter. When it appears to harden after about 3 minutes, flip the pancake and cook the other side until golden brown.
